Spicy Zucchini Cauliflower Rice
A spicy cauliflower rice dish that's filled with spice, heat and flavour! though I created this as a dish, it'd build a hearty main dish too.  I had a bowl of it by itself for lunch while the Chief critic enjoyed his as a facet to some chicken. each folks were happy, thus that’s thusmething! Wine wasn’t concerned either so another tick! 


I side the zucchini as I needed a vegetable that might go well with the spices while not engrossing them an excessive amount of.  Yes, I’m gazing you eggplant. thus my smart friend zucchini stepped up. be at liberty to feature another vegetable or perhaps omit it. simply fancy the spices!

You might need to serve this spicy cauliflower rice with a facet a food and cucumber dip to assist cool your mouth from the spices.  If I created it once more i might positively be reaching for the food pot.  It’s quite nice to own a sleek dip along side one thing spicy.

Ingredients


  • 1 head cauliflower
  • 1 zucchini trimmed and cut into cubes
  • 4 tablespoons olive oil
  • 2 jalapenos deseeded and chopped
  • 6 spring onions finely chopped
  • ½ teaspoon chilli powder
  • ½ teaspoon cumin
  • ½ teaspoon cayenne pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Instructions


  1. Preheat the oven to 200C/400F degrees
  2. Trim the leaves and stalks from the cauliflower and cut into florets.
  3. Make the cauliflower rice by either grating the florets, or using a food processor to blitz them.
  4. Place the cauliflower rice on a parchment paper lined baking tray and drizzle with half of the oil.
  5. Bake for 15 minutes, turning over half way through with a spoon or spatula.
  6. Heat half of the olive oil in a frying pan.
  7. Add the zucchini and cook for 5 – 8 minutes until slightly golden.
  8. Add the jalapeno and spring onions and cook for a further 5 minutes.
  9. Add the spices and stir thoroughly. Set aside.
  10. When the cauliflower rice is cooked, stir in the spicy zucchini mixture until all of the cauliflower is coated.
  11. Eat and enjoy!
