Perfect Banana Chocolate Chip Muffins! Fluffy & Moist!

It’s such a simple recipe with simply the right stability of banana and chocolate.  we adore to have the choco banana cakes for breakfast and for snacking for the duration of the day.  So yummy and delish! You just blend ’em up in much less than 5 mins and bake for 20 mins.

I used Ghirardelli Chocolate Chips in these yummy choco banana cakes because i really like Ghirardelli! sincerely ideal for snacking, ideal for breakfast, best for anytime!

You’ll want to make them again and again once more. Your own family might be so satisfied!!   you can freeze them, save them in the fridge or consume them at room temperature.  Even microwave for 10 – 15 seconds to get that oven baked sparkling flavor.  YUM!




Ingredients


  • 4 ripe bananas, medium or 1 & 1/3 cups of mashed banana
  • 1/3 cup melted butter cooled
  • 2/3 cup sugar or stevia
  • 1 egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking soda
  • A pinch of salt
  • 1 1/2 cups all purpose flour or 1 1/4 cup Purely Amazing GF Flour
  • 1 cup Ghirardelli semisweet chocolate chips

Instructions


  1. Preheat oven to 350.
  2. Grease your muffin tins
  3. Peel bananas and throw them in a big bowl with the melted butter and smash it all together with a fork.
  4. Keep blending until the mixture is creamy and smooth, not chunky.
  5. Add sugar, egg and vanilla and mix just until combined.
  6. Stir in salt and baking soda.
  7. Add flour and chocolate chips and mix until just combined. Do not overmix!
  8. Divide into muffin tins.
  9. Bake until cake tester or toothpick pulls out cleanly for about 18-20 minutes
