OVEN ROASTED BREAKFAST POTATOES
perfectly pro and roasted breakfast potatoes crowned with sweet caramelized onions, Bacon pieces, and topped off with sparkling herbs! i love breakfast ingredients, of a wide variety!  As a kid, breakfast for dinner become certainly one of my favourite food to have… and it still is these days  the next time you’re thinking of what to have alongside your eggs or sausage, strive those breakfast potatoes.  perfectly pro and roasted crimson-skin potatoes topped with caramelized onions, crispy Bacon and sparkling herbs.  the right aspect dish for breakfast!


commonly I decide upon hashbrown potatoes, because of a few “home fries” no longer being cooked all of the way thru (I’m picky approximately my potatoes lol)… but these are the ideal aggregate of crispy on the outside and fluffy and tender on the internal.  not to say the fantastic seasonings on those potatoes.  Smoked paprika is the star of this recipe!


The smoked paprika is what gives those potatoes a golden shade.  in case you haven’t attempted smoked paprika yet, you have to   It’s, well, smoky (I’m positive you’re just so amazed….), however seriously, it’s a smoky sweet spice that brings an earthiness and intensity of flavor to this dish.

INGREDIENTS :
  • 2 lbs red-skin potatoes chopped into small pieces
  • 5-6 slices of bacon cooked and crumbled
  • 1 yellow onion diced
  • 1-2 Tbsp bacon grease or olive oil
  • 2 Tbsp fresh rosemary minced
  • 1 tsp smoked paprika
  • 1/2 tsp dried thyme
  • 1 tsp salt
  • pepper to taste
  • Minced fresh rosemary for garnish
  • Minced fresh thyme for garnish


INSTRUCTIONS :
  1. Cook bacon slices in a skillet, removing with slotted spoon to a paper towel lined plate to drain. Reserve bacon grease.
  2. Preheat oven to 400 degrees. Line a rimmed baking sheet with parchment paper.
  3. In large bowl, combine potatoes, onions, herbs and seasonings, and reserved bacon grease and toss well to evenly coat potatoes.
  4. Arrange in single layer on baking sheet. Bake for about 40 minutes, tossing halfway through, until potatoes are golden brown and crispy.
  5. Top with crumbled bacon pieces and minced fresh herbs to garnish.
