BLUEBERRY SPRITZER WITH WHITE WINE

Ingredients
  • Blueberry Simple Syrup
  • 3 cups blueberries
  • 1 cup water
  • 3/4 cup sugar
  • 1/2 lemon rind only
  • Spritzer

  • 1 bottle club soda chilled


Instructions
  1. Make blueberry syrup
  2. Add all ingredients to a 2 qt pot and bring to a boil.
  3. Lower heat and let the blueberries cook until they are bursting. Remove from heat and cool.
  4. Strain through a fine mesh strainer, pressing lightly with a rubber spatula to extract as much juice as possible from the berries.
  5. Discard solids.
  6. Make spritzers
  7. Fill a glass with ice, then add 3 ounces of wine, 1 ounce of club soda and 1 ounce of blueberry syrup. Stir.
  8. Garnish with blueberries and mint, if desired. Serve immediately.
