Cranberry Zucchini Slaw
This sweet and salty Cranberry Zucchini Slaw is a refreshing side dish to add to dinners and picnics. Perfect healthy salad recipe.

Ingredients
  • 2 medium zucchinis, cut into 4 cups of noodles
  • 1/2 cup dried cranberries
  • 1/4 cup salted sunflower seeds
  • 1/4 cup plain Greek yogurt
  • 1 Tablespoon vinegar
  • 1 Tablespoon sugar
  • pinch salt and pepper

Instructions
  1. Cut the zucchinis into small matchstick pieces. You can use a spiralizer to create noodles, and then cut those into smaller pieces.
  2. Stir together all the ingredients and refrigerate for at least an hour for the flavors to mix together. Stir before serving. Makes about 4 cups of slaw.
